Prep Time: 25 minutes
Cook Time: 35 minutes
Total Time: 1 hour
Yield: 8 servings
Ingredients:
4 cups fresh blackberries
1/2 cup pure maple syrup
2 tablespoons cornstarch
Optional: Zest of 1 lemon
1/2 teaspoon cinnamon
2 premade pie crusts
1 tablespoon heavy cream (for brushing)
2 tablespoons crystallized sugar (for sprinkling)
Instructions:
Preheat Oven: Preheat your oven to 425°F (220°C).
Prepare the Filling: In a large bowl, gently toss together the blackberries, maple syrup, cornstarch, cinnamon, and optional lemon zest until the berries are evenly coated.
Assemble the Pie: Place one of the premade pie crusts into your dish. Pour the blackberry mixture into the crust, spreading it out evenly. Use the second pie crust to create a lattice or another design of your choice over the filling.
Bake the Pie: Place the pie on the middle rack of the preheated oven. Bake at 425°F for 15 minutes. Then, reduce the temperature to 375°F (190°C) and bake for 20 minutes, or until the filling is bubbly and the crust is golden brown.
Brush and Sprinkle: Remove the pie from the oven. Brush the top crust with heavy cream and sprinkle with crystallized sugar for a delightful crunch and sweet finish.
Cool and Serve: Allow the pie to cool slightly before serving. Enjoy warm or room temperature, perhaps with a scoop of vanilla ice cream.
This pie perfectly captures the flavours of fresh, seasonal blackberries' flavours combined with maple syrup's rich sweetness, making it a family favourite!
