Ingredients:
1 cup unsalted butter
1 cup granulated sugar
1/4 teaspoon salt
One teaspoon of vanilla extract
1 cup semi-sweet chocolate chips or chopped dark chocolate
1/2 cup chopped nuts (optional, like almonds or pecans)
Instructions:
Prepare the Pan:
Line a baking sheet with parchment paper or a silicone baking mat. Set it aside.
Make the Toffee:
In a medium-sized, heavy-bottomed saucepan, melt the butter over medium heat.
Add the sugar and salt, stirring continuously until the sugar is fully dissolved.
Continue to cook, stirring constantly, until the mixture reaches 300°F (150°C) on a candy thermometer called the "hard crack" stage. The mixture will turn a rich golden brown colour. This should take about 10-15 minutes.
Remove the pan from the heat and quickly stir in the vanilla extract.
Spread the Toffee:
Immediately pour the hot toffee onto the prepared baking sheet. Use a spatula to spread it out evenly into a thin layer.
Add the Chocolate:
While the toffee is hot, sprinkle the chocolate chips or chopped chocolate.
Let it sit for a minute or two to allow the chocolate to soften, then use a spatula to spread the melted chocolate evenly over the toffee.
Add Nuts (Optional):
If using nuts, sprinkle them over the chocolate while it's still soft, pressing them gently into the chocolate.
Cool and Break:
Let the toffee cool completely at room temperature or in the refrigerator until the chocolate is set.
Once cooled, break the toffee into pieces.
Store:
Store the toffee in an airtight container at room temperature for two weeks.
