Lasagna Soup Recipe

Cozy up with a hearty bowl of lasagna soup—rich, savoury, and packed with lasagna flavours in an easy-to-make soup. Perfect for busy weeknights!


Ingredients:

  • 1/2 lb ground beef

  • 1/2 lb ground sausage

  • 1 regular onion, diced

  • 3 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 1 (6 oz) can tomato paste

  • 6 cups chicken broth

  • 2 tbsp Italian seasoning

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp crushed red pepper flakes (optional)

  • 8 lasagna noodles broken into pieces

  • 1 cup shredded carrots (optional)

  • 1 cup spinach, roughly chopped (optional)

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • Fresh basil or parsley for garnish


Instructions:

  1. In a large pot, cook ground beef and sausage over medium heat until browned. Drain excess fat.

  2. Add onion, garlic, and shredded carrots, cooking until softened.

  3. Stir in crushed tomatoes, tomato paste, broth, Italian seasoning, salt, pepper, and crushed red pepper flakes. Bring to a boil.

  4. Reduce heat and add lasagna noodles. Simmer for 10-15 minutes or until noodles are tender.

  5. In the last few minutes, stir in spinach until wilted.

  6. In a small bowl, mix ricotta and mozzarella. Serve the soup with a spoonful of cheese mixture and fresh basil or parsley.


Tips:

  1. Add extra veggies: Shredded carrots provide a natural sweetness, and spinach adds a nutritious boost. Mix in zucchini or bell peppers for even more flavour and nutrition.

  2. Cheesy goodness: For a more indulgent dish, mix extra mozzarella or even Parmesan into the soup for a creamier texture.

  3. Make it ahead: This soup tastes even better the next day and is a great meal prep option.
