Soy Sauce Eggs Recipe

Ingredients:
Six large eggs
1/2 cup soy sauce
1/2 cup water
1/4 cup mirin (or substitute with one tablespoon sugar if you don't have mirin)
One tablespoon of rice vinegar
Two cloves of garlic smashed.
1-inch piece of ginger, sliced
1/2 teaspoon sesame oil (optional)
Green onions, chopped (for garnish)
Sesame seeds (for garnish)
Instructions:
Boil the Eggs:
Bring a pot of water to a boil.
Carefully add the eggs and boil for 6-7 minutes for soft-boiled eggs (or 9-10 minutes for firmer yolks).
Once done, immediately transfer the eggs to a bowl of ice water to stop cooking. Let them sit for a few minutes before peeling.
Prepare the Marinade:
In a small saucepan, combine soy sauce, water, mirin (or sugar), rice vinegar, garlic, ginger, and sesame oil (if using).
Bring the mixture to a simmer, then remove from heat. Let it cool to room temperature.
Marinate the Eggs:
Place the peeled eggs in a shallow container or a Deli Container.
Pour the cooled marinade over the eggs, ensuring they are fully submerged.
Seal the container or bag and refrigerate for at least 3 hours, preferably overnight, for the flavours to develop.
Serve:
Remove the eggs from the marinade. You can slice them in half or serve them whole.
Garnish with chopped green onions and sesame seeds.
