Strawberry Meringues

Delight in the delicate crunch and sweet, natural strawberry flavor of these strawberry meringues. Made with freeze-dried strawberries, these light and airy treats are perfect for any occasion, from afternoon tea to holiday gifts.
Yields/Servings: Makes approximately 20-24 meringues.

Total Time: 2 hours 45 minutes to 3 hours 15 minutes (includes baking and cooling time)
Ingredients:
3 large egg whites (100g)
150g granulated sugar (about 3/4 cup)
1/4 tsp cream of tartar (optional)
1/2 tsp vanilla extract
15g freeze-dried strawberries, finely ground into a powder (about 2 tbsp)
Instructions:
Preheat Oven: Preheat your oven to 200°F (95°C) and line a baking sheet with parchment paper.
Prepare the Meringue:
In a clean, dry mixing bowl, beat the egg whites on medium speed until frothy.
Add the cream of tartar (optional) and continue to beat until soft peaks form.
Gradually add the sugar, one tablespoon at a time, while beating on high speed until stiff, glossy peaks form.
Gently fold in the vanilla extract and freeze-dried strawberry powder until fully incorporated.
Pipe or Scoop:
Transfer the meringue mixture into a piping bag fitted with a star or round tip.
Pipe small mounds or swirls onto the prepared baking sheet. Alternatively, use a spoon to scoop the meringue into small, rustic shapes.
Bake:
Bake the meringues in the preheated oven for 1.5 to 2 hours, or until they are dry to the touch and can be easily lifted off the parchment paper.
Cool:
Turn off the oven and leave the meringues inside to cool completely with the door slightly ajar. This cooling process will take about 1 hour.
Store:
Once completely cool, store the meringues in an airtight container to keep them crisp.
Tips:
For a more intense strawberry flavor, increase the freeze-dried strawberry powder slightly, but be cautious as too much could affect the meringue's structure.
If you prefer a more vibrant color, add a drop or two of pink or red food coloring to the meringue.
Meringues are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to two weeks.
